Learners will outline current nutritional guidelines for a healthy diet, describe the impact diet has on health, describe food preparation techniques that maintain the nutritional value of food, and understand how to plan and provide meals for those with special diets (including medical needs, allergies, vegans, vegetarians and diets for different faiths)

On successful completion of this qualification, learners may wish to continue their development by undertaking one of the following qualifications:

  • Highfield Level 2 Award in Food Safety in Catering
  • Highfield Level 3 Award in Food Allergen Management for Caterers
  • Highfield Level 3 Award in Principles of Developing a Positive Food Safety Culture
